Tarta de Santiago

Tarta de Santiago (St. James cake)

A "Tarta de Santiago" (or St James cake) is a delicious regional cake original from Galicia, in the north-west of Spain. This medieval almond cake has a characteristic moist texture, obtained by using ground almonds instead of flour, which also makes it gluten free. The distinctive touch of citrus and cinnamon combines perfectly with the nuttiness of the almonds. It is what we call a very effective and simple recipe, as it uses only 5 ingredients, takes no more than 30 minutes to make and the result is guaranteed to impress all of those who try it. The top of the cake is traditionally decorated with the "Cruz de Santiago" (Cross of Saint James) and icing sugar.

Garlic chicken wings with mushrooms

Garlic chicken wings with mushrooms

This classic of the traditional Spanish cuisine has been one of my favourite dishes since I was very little. Chicken, rustic herbs and garlic, a lot of garlic! None of them could work without the other and they all contribute equally to obtaining a mind blower sauce. It is so good that I simply can't resist to dipping loads of bread in it (always thinking in making the life of my dishwasher easier, of course)

Gratin dauphinois

Gratin Dauphinois

Traditionally, this French dish is made out of potatoes and crème fraîche. Our recipe tweaks a bit the original and uses milk and cream infused with garlic and nutmeg. The classical recipe does not contain cheese either but... what can we say? We can't help it when it comes to gratin cheese, so we top it with a generous amount of Gruyère, glorifying this dish even further.
