A focaccia is a versatile rustic-looking Italian flat bread that has some similarities with a pizza dough. It is original from the region of Liguria, in the north of Italy. This bread is usually seasoned with infused olive oil and sea salt, and can be topped with a wide range of ingredients such as herbs, olives, anchovies, cheese, sun-dried tomatoes, mushrooms, etc. A focaccia can be served on its own or together with a nice antipasti or dipping sauce, it can also accompany a main course.

Traditionally, this French dish is made out of potatoes and crème fraîche. Our recipe tweaks a bit the original and uses milk and cream infused with garlic and nutmeg. The classical recipe does not contain cheese either but... what can we say? We can't help it when it comes to gratin cheese, so we top it with a generous amount of Gruyère, glorifying this dish even further.

Garlic mayonnaise is a stable cold emulsion made of garlic, egg yolk and oil. It is sometimes confused with alioli, typical from Catalonia, although the later does not use egg. In as little as 10 minutes, you will prepare a delicious garlic mayo that has nothing to do with anything you can buy at the supermarket.
